Production
Frédéric lives on a property surrounded by his vineyards and makes it a point of honour to preserve his environment and work in harmony with nature. His superb, linear and precise wines have been certified ‘Haute Valeur Environnementale’ to reflect this and ensures that elements of biodiversity are widely present in the domaine.
Hand-harvested whole bunches of Pinot Noir go into the tank and are fermented at between 28° C and 32° C. Skin contact during fermentation for just 2 weeks, with daily pumping-over for maximum extraction. Free run juice and press-juice are vinified separately but reassembled for malolactic fermentation.
Tasting Notes
A fresh and intense nose, slightly spicy, dominated by red fruit. On the palate, the fresh red fruits are balanced by delicate and fine tannins.
