Production
This winery is one of the oldest and most reputable in all of Siciliy. Each wine comes from specific plots in Sicily that are chose to best express the chosen variety. It is then through this painstaking care and attention that the wines are made to not only showcase the unique Sicilian terroir but the grape as well. They’ve been perfecting this since 1824.
Grapes are harvested by hand, first thing n the morning to retain freshness. 55% of the first pressing must is left to ferment slowly in small oak casks for about 40 days. The wine rests on the lees at a controlled temperature until spring. Further bottle ageing for at least 3 months before release.
Tasting Notes
Straw yellow with slight greenish highlights, the nose is complex with floral notes and subtle vanilla.
