A self-confessed nomad, Luis roams the lands of Navarra and Rioja looking for exceptional plots of old or abandoned vines to turn his hand to. His wines are unflinching in character and in his own words ‘It’s about fermenting the grape and putting it in the bottle. Making pure, honest wines.’ A total artisan, there’s a real no bullshit approach that makes these wines so exciting. Kimera is a partnership between Luis and his good friend Gonzalo Celayeta, a talented local vigneron, their goal: to put Grenache and their local village San Martin de Unx on the map.
The very old vines selected for this wine have a low yield, to produce grapes that exhibit complex and intense aromas. Kimera is pure Garnacha from two vineyards in the village of San Martin de Unx, 300m high in the Navarran mountains. Spontaneous fermentation takes place at 28ºC and is macerated for 15 days, with two daily pump overs. The wine is then transferred to large old clay tinajas (amphora) of 3700l for the malolactic fermentation, and it’s here it ages for a further 10 months.
Tasting Notes
This is a beautifully expressive wine which fully shows off the Garnacha grape variety in all its glory. Intense cherry aromas, with violets and scrubland floral notes. Delicate yet juicy palate, with super fine tannins and a long, tasty finish.
