Kimera Ancestral Pet Nat Blanco
LMT natural wines are a thing of beauty and this is the most moreish of them all.
A self-confessed nomad, Luis roams the lands of Navarra and Rioja looking for exceptional plots of old or abandoned vines to turn his hand to. His wines are unflinching in character and in his own words ‘It’s about fermenting the grape and putting it in the bottle. Making pure, honest wines.’ A total artisan, there’s a real no bullshit approach that makes these wines so exciting.
80% Garnacha Blanco & 20% Garnacha Blanco with 1 year of barrel age. Fermented in stainless steel at low temperature. Bottled with 24g/l residual to continue fermentation. Final RS will vary. The wine is then topped up with the same wine, a small dose of sulphur added and then labelled by hand. Only 700 bottles made.
Intense peach, apricot and vanilla, with a deliciously easy drinking and delicately sparkling sensation in the mouth. Pure and utter pleasure.
