Laureatus hand harvest and hand select their best grapes from their 30 year old vines for use in their flagship Dolium wine. The grapes are gently pressed and fermented in cool temperature controlled stainless steel tanks to retain freshness in the wine. Once fully fermented the wine spends a few months on lees in French oak barrels.
Tasting Notes
On the nose the wine expresses medium high intensity, outstanding fine toasted notes of vanilla, spices and caramel with an undertone of ripe pear and apple. On the palate the wine is soft with a distinct freshness. Candied fruit, juicy citrus, subtle brioche and a lick of vanilla makes this a complex and highly intriguing wine!
