This winery is one of the oldest and most reputable in all of Siciliy. Each wine comes from specific plots in Sicily that are chose to best express the chosen variety. It is then through this painstaking care and attention that the wines are made to not only showcase the unique Sicilian terrior but the grape as well. They’ve been perfecting this since 1824.
Harvest by hand, at full maturity, after the 2nd half of September. Traditional de-stemming and maceration for 8 days at 28° - 30° C. A blend between oak aged wine and wine vinified in stainless steel is made before 6 - 8 months ageing in bottle.
