Production
Navarran wines are criminally underrated and PdV are the leader of Navarra wines in the UK market. All about great value and consistency. The name Sabina is taken from the indigenous Spanish juniper tree grown locally in Navarra, recognisable for its horizontal growing, almost 'storm-battered' look.
Selected from specific plots with limestone and loam soils, the grapes are macerated on their skins for 24 hours and then fermented to achieve optimum fruit characteristics. Only the 'bleeding' free run juice is used and aged for 12 months in 225L 80% American 20% Frenck oak barrels with further bottle age.
Tasting Notes
The wine is bright cherry red with ruby taints. The aromas are ripe red and black fruit -blackcurrants, cherries and plums, balanced with a well-integrated oak which adds hints of cinnamon and cocoa. The palate is soft and velvety with sweet tannins, delicious fruit and toasty flavours.
