Production
Navarran wines are criminally underrated and PdV are the leader of Navarra wines in the UK market. All about great value and consistency. The name Sabina is taken from the indigenous Spanish juniper tree grown locally in Navarra, recognisable for its horizontal growing, almost 'storm-battered' look.
Hand harvest, with a semi-freezing process of the berries, selection tables and cold maceration at 4ºC for
24 hours. Alcoholic fermentation for 7 days with selected yeasts at 28ºC. Maceration after fermentation
for 14 days. Total fermentation period of 22 days. The wine is then aged in small oak barrels for 14th months, 50% French, 50% American, along with extensive bottle ageing until ready for release.
Tasting Notes
Complex nose of stewed fruit, herbal characters and hints of vanilla and cocoa. The flavours are soft with developed black fruit, eucalyptus and rosemary all wrapped up in a warm toasty richness.
