Production
Grapes are handpicked and undergo a brief cold maceration to extract colour. The free-run juice ferments at 15 °C in stainless steel over 25 days, retaining bright aromatics and freshness before bottling.
Vinyard
From organically farmed 30 year-old Bobal vines grown at 750 m on limestone soils. The Mediterranean climate and cool valley breezes preserve acidity and aromatic lift, while careful vineyard work ensures purity of fruit.
Pairing
Pairs beautifully with grilled prawns, tomato and burrata salad, or roast chicken with pomegranate glaze. Equally at home alongside tapas or seafood paella.
