Acqua della Serpa Bianco, amphora aged 2022

Trebbiano (33%), Pecorino (33%), Malvasia bianca (33%) · 2022 · 12% abv

Amber-hued and aromatic, with subtle notes of quince, dried herbs, and almond skin. Textured and complex, yet surprisingly graceful.
Production

Grapes fermented and matured on skins for ten months in terracotta amphorae. No oak was used, but micro-oxygenation through clay lent complexity and polish. Bottled without filtration to preserve authenticity.

Vinyard

The clay-based vineyards at 350 m give fruit with both weight and freshness. Surrounded by forest, the vines benefit from biodiversity and cooling air. The altitude stretches the ripening season, ensuring phenolic maturity. Organic farming avoids chemical inputs, letting the site express itself clearly.

Pairing

Great with fish, white meats, fresh cheeses but try Queen Scallops Sauteed in Vin Santo infused Butter if you are feeling adventurous.
