A unique, organic blanc de noir (a white wine made from red Garnacha grapes) produced in the Sierra de Gredos region of Spain. It is highly prized for its exceptional freshness, crisp acidity, and aromatic profile featuring jasmine, lemon, apple, and lychee.

Production

Early-harvested red Garnacha is gently pressed without skin contact to keep the juice clear. It undergoes a cold, native-yeast fermentation in stainless steel to protect its crisp, floral aromatics. The wine is bottled unfiltered and unoaked to maintain its raw mineral purity.

Vinyard

Sourced from 77-year-old vines at 1,000 meters in DO Cebreros, this Garnacha thrives in decomposed granite soils. The high-altitude, cool climate produces an elegant, mineral-driven, and crisp wine, defying heavy, traditional styles.

Pairing

The wine made for Paella. Other seafood/rice combinations welcomed.
