Pinot Noir from Valladolid with a surprisingly modern twist. Extremely fruity, light and delicious. Strawberry and cherry with delicious herbal notes. Fresh, tart and aromatic.
Production

100% Pinot Noir. The grapes are macerated pre-ferment at 15 degrees. Fermentation happens for 18 days using native yeast. Pump over 3 times a day depending on conditions. Finally this is aged for 6 months in French Oak barrels.

Vinyard

Alta Pavina’s Pinot Noir grows at around 1,000 metres above sea level in Valladolid, among the very highest plantings in Spain. The extreme altitude creates sharp day–night temperature swings, locking in acidity and lifting aromatics. Planted on limestone-rich soils layered with clay and sand, the vines produce fruit with mineral tension, elegance and structure — an exceptional terroir for cool-climate Pinot Noir in a traditionally warm region.

Pairing

A versatile partner for grilled duck breast, earthy wild mushroom risotto, or soft, creamy cheeses such as Brie and Camembert.
