Production
Initially aged under flor for several years before oxidative ageing begins, this Amontillado is a masterclass in patience and precision. The gradual transition from biological to oxidative ageing builds layers of complexity, while the solera system ensures depth, consistency, and character in every drop.
Vinyard
Sourced from old vines rooted in the region’s prized albariza soils — fine, chalky, and water-retentive — which concentrate flavour and finesse. The warm, dry Andalusian climate and cooling Atlantic breezes work together to ripen the grapes slowly while retaining freshness and acidity.
Pairing
A dream with roasted artichokes, mushroom croquetas, or aged Manchego. Its savoury edge also complements umami-driven dishes like grilled eel or soy-marinated pork belly.
