A raw, soulful Pinot: wild strawberry, cranberry, and dried herbs layered with subtle umami and smoky clay notes. Long skin contact brings depth, but the core remains bright and lifted.
Production
Hand-harvested, manually destemmed, fermented in Tuscan clay amphorae. 12 months on skins with no sulphur; gentle pressing and natural fermentations yield a wine of striking texture.
Vinyard
Pinot from Bourgogne sites on classic clay-limestone. The soils lend both fruit vibrancy and structure, allowing the amphora method to highlight purity over polish.
Pairing
Perfect for pigeon with lentils, duck breast with cherries, or earthy mushroom ragout. A natural partner for charcuterie and aged tomme.
