Production
One-third wild-fermented in Acacia barrels, the rest cold-fermented in stainless steel. Only free-run juice used, with no skin contact to preserve purity. Aged 8 months on fine lees for depth.
Vineyard
From two organically farmed vineyards on Mt Pangaion’s foothills (220 m), where silty topsoils over clay and significant day–night shifts yield freshness and structure.
Pairing
Brilliant with grilled prawns and lemon, steamed mussels, or roasted chicken with preserved lemon and herbs.
