Production

Grapes are hand-harvested and fermented cool in stainless steel. A brief period on fine lees adds texture. Bottled young with a natural spritz to preserve vivacity.

Vinyard

Estate vineyards in Okondo, Alava, sit on clay-limestone slopes with Atlantic influence. Cool, humid conditions keep acidity razor-sharp. The soils lend minerality and a salty snap.

Pairing

Serve chilled in a glass at 6º–8ºC. Ideal for pairing with seafood dishes such as sashimi, sushi, oysters, clams, and cold shellfish. It also pairs beautifully with rare fish preparations. For contrast, try bold cheeses like Gorgonzola and Cabrales.
