Production

Hand harvested, indigenous yeast ferment with 30–40 days’ maceration (submerged cap). Aged 18 months in large oak, then 12 months in bottle before release.

Vinyard

From 25-year-old Nebbiolo vines at 350 m in Grinzane Cavour. Clay-limestone soils, organic farming, and Guyot pruning foster balance between fruit richness and structure.

Pairing

Perfect with venison stew, slow-cooked beef cheeks, or tajarin with white truffle. Also remarkable with mature cheeses or as a meditative glass on its own.
