Straw yellow with a fine, persistent mousse. The nose shows gentle citrus lift—ripe Amalfi lemon rather than sharp zest—layered with bee pollen and white Mirabelle blossom. The palate is light and elegant, with clean, refreshing acidity and mineral notes of straw and unsweetened honey, finishing bright and balanced.
Production
A base sparkling tea is created by fermenting tea with a SCOBY culture of bacteria and yeast. After primary fermentation, the tea is infused with Danish bee pollen, citrus elements, and Mirabelle blossoms. The final alcohol-free drink is stabilised through precise fermentation control and gentle low-temperature heat treatment, ensuring purity and shelf stability.

This variant is infused with Bee Pollen which is carefully cultivated and selected from our partner and expert in Northern Denmark.
Pairing
Excellent with grilled scallops, prawns, or white fish. Its acidity also suits caramelised fennel or braised celery, and it works neatly as an elegant apéritif.
