A fresh, mineral driven wine made from Merseguera. Fermented at low temperature and aged for 6 months in 500 L French oak barrels, which adds finesse while preserving the freshness. Citrus and floral notes with a pronounced saline character and subtle oak. Lively, tense & vibrant. It it Chablis, no. But heading somewhere in that direction.
Production
The harvest takes place in September, yielding clear musts that ferment at 16 degrees. Aged for six months in oak barrels.
Vinyard
The Bilaire Blanco vineyards are planted in the traditional bush vine system under natural conditions, using organic viticulture practices, at an altitude of 600 meters in soils poor in organic matter.
Pairing
This versatile wine pairs perfectly with pasta with sauce, rice dishes, seafood, fish, white meats, and soft or blue cheeses.
