Production

After a light skin infusion (48h), and fermentation in stainless steel tanks and chestnut barrels (50-50%), during aging for 18 months, a veil of yeast known as "flor" naturally forms on the surface of the wine, giving the wine a unique and distinctive character.

Vinyard

Sourced from Palomino grown in Pago Balbaína, one of Jerez’s classic coastal sites. The vineyards sit on Albariza — bright white limestone formed from fossilised marine algae and diatoms. This calcium-rich soil absorbs winter rain like a sponge, then hardens into a protective crust in summer, reducing evaporation and slowly releasing moisture to the vines, giving Palomino its restrained fruit and mineral edge.

Pairing

A layered white that combines freshness with a savoury, umami-driven core and a distinctly saline edge. With less than 1 g/L of sugar, it finishes clean and dry, making it ideal for Mediterranean dishes, olives, matured cheeses, cured ham, seafood, or simply enjoyed on its own.
