Golden-straw hue with aromas of chamomile, peach and dried apricot, layered with pineapple, papaya and a touch of white pepper. The palate is fresh, mineral and long, finishing on exotic fruit and herbs.
Production
The Malvasia from the Barrera vineyard undergoes a slow and gentle press. All other vineyards are destemmed, fermentation starts spontaneously with the skins. Native yeast fermentation; aged 6 months in large foudre, then 18 months in 500L French oak.
Vineyard
Our dry farmed bush vines are situated in the high-altitude village of Kripan nestled near the Sierra Cantabria Mountain range. The vineyards are located on terraced ravines surrounded by forests and native flora. Due to old vines with narrow spacing between rows, we employ draft horses to gently work the limestone soils.
Pairing
Pairs beautifully with roasted guinea fowl, saffron rice dishes or monkfish with fennel.
