Casalforte Amarone Della Valpolicella 2021

A deeply coloured Amarone with layers of cherry compote, black plum and dried fig, woven with vanilla, cacao and a hint of espresso. Concentrated yet graceful, the palate is dense and velvety, framed by polished tannins and a long finish of spice and dried herbs.
Production
Following appassimento, fermentation occurs over ~20 days on the skins with regular pump-overs to extract colour and structure. The wine matures for 18 months in oak, followed by 6 months in bottle, achieving both power and refinement.
Vinyard
Sourced from hillside vineyards across Valpolicella, where the combination of limestone and clay soils encourages deep root systems and low yields. Grapes are left to dry in temperature- and humidity-controlled lofts until December, concentrating sugars and flavours.
Pairing
Best matched with braised venison or osso buco, rich ragùs or aged cheeses like Monte Veronese. Also superb alongside truffle risotto or dark chocolate game sauces.
