Chablis Amphora 2020
Bourgogne, France
Chardonnay (100%) · 2020 · 12.5% abv
An earthier, textural side of Chardonnay. Citrus zest, fennel, and pear intermingle with clay-driven savour. The palate is supple yet linear, with a savoury finish echoing stone and spice.
Production
Manual destemming and fermentation in Tuscan red clay amphorae. Both alcoholic and malolactic fermentation proceed with native yeasts. Ageing on skins adds grip and a tactile, almost sandy finish.
Vineyard
Hand-harvested fruit from Kimmeridgian-era limestone and clay. These ancient marine soils lend both chalky salinity and depth, amplified by careful selection from hillside parcels.
Pairing
Think richer pairings: monkfish with saffron, poularde in cream sauce, or aged goat cheese. Also brilliant with sushi that plays on texture, such as uni or fatty tuna.
