A great, well rounded, fruit forward house Champagne. Aromatic notes of juicy pear and apricot on the nose are underpinned by more mature aromas of hazelnut and fresh bread. The texture is creamy and full bodied with well balanced acidity and plenty of bubbles.
Production
The grapes are first pressed in small stainless-steel vats, then transferred to ceramic vats for 12 hours of natural clarification. The clear juice is moved to large steel tanks, where fermentation occurs between September and March. Afterward, the wine is bottled for secondary fermentation and lees ageing. A dosage of 9–10 g/L adds richness, and this Brut Sélection blends 60% wine from 2017 with 40% reserve wines from 2014–2016.
Vinyard
Grapes for this cuvée are grown in the lieu-dit “Auche,” around the village of Janvry, which lies just west of Reims.
Pairing
A highly versatile Champagne, ideal with canapés, mushroom-based starters, poultry, or soft cheeses — though it’s equally enjoyable simply as an aperitif.
