Citius Pinot Noir 2020
VdlT Castilla y León, Spain
Pinot Noir (100%) · 2020 · 14.5% abv
Pinot Noir. From Spain. Hell yes. Bright cherry red, this wine bursts with red berry aromas, a velvety mouthfeel, fresh acidity, and earthy undertones. Think Burgundy’s rustic elegance with the plush fruit of California or Oregon—a truly unique Pinot that will age beautifully, if you can wait.
Production
A 5-day cold maceration at 14 ºC precedes fermentation with indigenous “pie de cuba” yeasts. Gentle pump-overs during a 10-day maceration keep temperatures under 25 ºC, preserving finesse. The wine then spends 18 months in French oak, gaining structure, complexity, and refined character.
Vineyard
Just 2 km from the Duero in Valladolid, at nearly 1,000 m, Bodegas Alta Pavina proves what daring can achieve. Its 35-year-old Dijon clone Pinot Noir vines thrive on calcareous loam soils in a moorland setting with north-facing exposure, tempering sun and heat. The continental climate—with low rainfall and striking day–night contrasts—gives the vineyard and wines strong personality.
Pairing
A natural partner for rich, savoury, and indulgent flavours. Its freshness and finesse cut beautifully through long-aged blue cheeses, while its fruit and texture complement Iberian cured meats and classic tapas such as jamón croquetas.
