Production
Hand-harvested Tempranillo undergoes fermentation in stainless steel with daily pump-overs for gentle extraction. The wine then spends 14 months in French oak barriques — half new, half second-use — gaining structure and spice, followed by a further 12 months in bottle to integrate and refine. The result is a wine of precision, texture and elegance.
Vineyard
Sourced from 50-year-old bush vines rooted in limestone-rich clay soils around Ollauri, where altitude, diurnal temperature shifts and Atlantic influences deliver fruit of depth and balance. Low yields and meticulous hand selection ensure concentration and finesse, setting the stage for a wine that marries tradition with contemporary precision.
Pairing
This wine’s depth and freshness make it superb with rich dishes like slow-braised lamb, venison ragù or oxtail stew. It also excels alongside Iberian cured meats, mature Manchego or hearty game pies — anything with richness and intensity to match its structure.
