Diatomists Palomino NV
VdlT Cádiz, Spain
Palomino (100%) · NV · 11.5% abv
Bright and focused, showing citrus peel, white flowers, and a clear chalky edge. The palate is fresh and lightly savoury, with mineral texture, subtle orchard fruit, and lively acidity. The old American oak adds quiet roundness without masking the purity. Clean, saline and persistent.
Production
Palomino is fermented and aged for eight months in 2,000-L American oak barrels over 100 years old, giving gentle oxidative refinement without flor influence. Bottled en rama after six months’ settling to preserve texture and clarity. 11.5% ABV, 2 mg/L sugar.
Vineyard
From Pago Balbaína at 70–80 m, exposed to cooling Poniente winds. The vines grow in Tosca Cerrada Albariza, a compact, fossil-rich limestone that stores winter moisture and drives the wine’s mineral, saline profile. Organic farming and vara y pulgar training maintain low vigour and precision in the fruit.
Pairing
Excellent with shellfish, grilled white fish, or fennel-based dishes where the wine’s saline lift shines. Its savoury edge pairs well with tortillitas de camarones, jamón, or soft goat’s cheese. A versatile match for clean, coastal Mediterranean flavours.
