Golden-hued and brilliantly clear, El Lebrero is a textured, expressive Albillo with aromas of ripe exotic fruit, white blossom, fennel and chalky minerality. The palate is broad yet balanced, unfolding layers of orchard fruit, citrus peel and spice over a finely etched structure. A long, savoury finish reveals saline depth and a subtle, nutty complexity.
Production
Grapes are hand-harvested into small boxes and double-sorted before gravity-fed into fermentation vessels. Native yeast fermentation takes place partly in 500 L French oak and partly in concrete egg. The wine ages on lees for nine months in both vessels, building depth, texture and subtle complexity without sacrificing purity.
Vinyard
Fruit is sourced from El Lebrero and La Virgen vineyards, perched at 880–920 m. Sandy-limestone and clay-loam soils lend freshness and mineral tension, while high altitude and cool nights preserve acidity. Yields are naturally low (~2 kg per vine), concentrating Albillo’s aromatic intensity and structure.
Pairing
Ideal alongside grilled monkfish with saffron aioli or turbot with beurre blanc. It also excels with roast guinea fowl, salt-baked celeriac or aged Comté, where its mineral backbone and creamy texture come into play.
