Bright, juicy red fruits, raspberry and cherry, really jump out the glass. There's a touch of wild herbs and a flinty/stony edge. Light-footed but earthy, with just the right amount of rustic grip. There a hint of dried plum which adds depth and intrigue. Beguiling wine.

Production

Small-crate harvest; partial destemming and foot-treading for delicate extraction. Wild ferment; ageing in old oak and demijohns for texture and energy. Bottled unfined and unfiltered, wax-sealed — nothing to hide, plenty to say.

Vinyard

A century-old bush-vine amphitheatre on a steep, east-facing slope in Tirapu. Marl and gypsum rich in magnesium; windswept, poor soils force deep roots. No herbicides or insecticides — hand tools, tiny copper doses, and patience.

Pairing

Chuletillas de cordero over vine cuttings, wood-roasted vegetables with romesco, or rabbit with garlic and herbs. Smoke, char and savour match the wine’s earthy line.
