Etna Bianco DOC 2023

Carricante (100%) · 2023 · 12.5% abv

Bright straw-yellow with golden glints, this Carricante opens with citrus zest, green apple and white peach layered over acacia and wild herbs. The palate is taut and saline, driven by volcanic minerality and brisk acidity, finishing long, stony and vibrant — a pure expression of Etna’s high-altitude whites.
Production

Hand-harvested fruit is destemmed, gently pressed and cold-macerated for several hours before static settling. Fermentation takes place in stainless steel at controlled temperatures, followed by six months on fine lees with bâtonnage to build texture and complexity. Bottled in spring to capture freshness.

Vinyard

Sourced from alberello-trained vines at ~600 m on Etna’s north slope. Soils are a complex mix of stony alluvium below and lava-rich volcanic deposits above, their drainage and mineral load shaping the wine’s tension and depth. Wide day-night temperature swings preserve acidity and aromatic precision.

Pairing

A natural partner for raw shellfish, Sicilian crudo or grilled langoustines. Its citrus-mineral edge also complements ricotta-filled pasta with lemon and mint or delicate white fish with fennel.
