Production
Bunches are hand-selected, partially destemmed and fermented with native yeasts. A 15-day maceration extracts colour and fine tannins, followed by 12 months in oak for structure. The wine settles naturally in steel and is bottled unfiltered to preserve purity and site character.
Vineyard
Hand-tended alberello vines at ~700 m thrive in the volcanic slopes of Etna, where sandy, lava-infused soils and dramatic diurnal shifts deliver freshness and nuance. The altitude and exposure temper the Mediterranean sun, producing reds of tension and longevity.
Pairing
A versatile partner for slow-braised lamb shoulder, porcini risotto or grilled aubergine caponata. Also shines alongside aged pecorino or roasted quail with pomegranate glaze.
