Cherry-red with a garnet rim, this Tinto Fino is a study in layered nuance: ripe blackberry and blueberry weave with clove, rosemary and graphite. The palate is powerful yet poised — ripe fruit framed by cocoa-dusted tannins, balsamic lift and savoury depth. A long, persistent finish builds complexity as it lingers.
Production
Hand-harvested grapes are sorted twice before gravity-fed into fermenters. A gentle cold pre-maceration precedes spontaneous fermentation with native yeasts. Ageing takes place for 18 months in 500 L French oak fûts, followed by extended bottle rest. Malolactic conversion occurs in oak, shaping the wine’s silken texture and refined tannins.
Vinyard
A mosaic of 25 plots in Sotillo de la Ribera, planted between 830 m and 930 m on limestone-rich soils. The altitude brings pronounced diurnal shifts, locking in acidity and aromatic purity. Ecological viticulture and low yields (~1.8 kg per vine) ensure concentrated fruit that reflects the nuances of each site, from páramo plateau to clayey lower slopes.
Pairing
A natural partner for slow-braised lamb shoulder or roast venison with rosemary. Its savoury depth also flatters dishes like morcilla with caramelised onions or cocoa-spiced duck breast, and it stands up beautifully to aged Manchego or truffled pecorino.
