Bright, focused and expressive, Fiennes marries citrus and orchard fruit purity with creamy lees texture and a fine, persistent mousse. Classical structure meets coastal freshness.
Production

A blend of Chardonnay, Pinot Noir and Pinot Meunier crafted in the traditional method. The cuvée is aged for three years on lees before a final dosage of 7 g/L, delivering complexity and finesse while retaining tension and freshness.

Vinyard

Grapes are drawn from Henners’ estate vineyards and neighbouring sites with chalk and clay soils, moderated by maritime influence and cool breezes that ensure long, slow ripening and precise acidity.

Pairing

A natural match for fish and chips — the bubbles cutting through the richness — but equally at home with oysters, tempura prawns or lemon sole with beurre blanc.
