Vibrant cherry red with violet reflections, Flores de Callejo bursts with wild berry aromas, hints of violet and balsamic lift. The palate is juicy and expressive, full of red and black fruit wrapped in soft spice and fine tannins. A lively finish brings freshness and a touch of sweet herbs.
Production
Hand-harvested fruit is double-sorted and cold-macerated before fermentation with native yeasts. The wine is aged for five months in a mix of 500 L French oak and stainless steel, a gentle élevage that preserves its vibrant fruit character while adding subtle structure and polish.
Vinyard
Sourced from several parcels — including La Emilia, La Huelga and Astrales — planted on clay soils between 830 and 850 m. These lower, warmer sites give a rounder fruit profile while retaining freshness thanks to cool nights and careful canopy management. Yields are moderate (~2.5 kg per vine) for bright, concentrated fruit.
Pairing
Ideal with grilled lamb chops and rosemary, chorizo-studded bean stew, or chargrilled vegetables with romesco. Its lively fruit also pairs beautifully with paprika-spiced roast chicken or soft sheep’s cheeses.
