Ruby-red with a luminous core, Gran Callejo opens with aromas of ripe red fruit, crushed herbs, cocoa and white pepper, layered over a stony, mineral edge. The palate is poised and vibrant — fresh redcurrant and wild strawberry framed by balsamic lift, laurel and finely etched tannins. A long, savoury finish reveals depth and quiet power.
Production
Grapes are harvested by hand into small boxes, carefully sorted, and gravity-fed into fermenters. Spontaneous fermentation with native yeasts is followed by extended ageing: 24 months in French oak barrique and a further 36 months in bottle. This patient élevage polishes the tannins and builds remarkable depth and ageing potential.
Vinyard
Sourced from the Camposanto and Bodega parcels at 880–900 m on franco-sandy soils in the pine-sheltered upper slopes of Sotillo de la Ribera. The combination of altitude, free-draining soils and cool nights delivers fruit with precision, freshness and striking aromatic intensity.
Pairing
A classic match for roast venison with juniper and red wine jus or slow-braised beef cheeks. It also pairs beautifully with wood-grilled ribeye, rosemary-infused lamb or aged hard cheeses like Zamorano and Manchego viejo.
