Production

Hand-harvested parcels fermented in open vats with a seasoning of whole bunches for lift. Native yeasts, gentle extraction, then rest in mostly older French oak to polish the edges. Unfined, lightly filtered, sulphur kept tidy. Big smile, fine tailoring.

Vinyard

Sourced from Barossa Valley vineyards on sandy loam and red earth. Old vines and plenty of sunshine deliver generosity; afternoon breezes and cool nights keep things fresh. Picked for brightness over brawn, so you get purity and a clean, spicy finish.

Pairing

Perfect with roast lamb, slow-cooked beef, or rich stews. Also a treat with hard cheeses or dark chocolate dishes.
