Light golden, reminiscent of ripe yellow apples. The nose is bold with notes of lavender, ginger, peach, and mashed apple, supported by gentle acidity that signals a fuller-bodied fermented tea. On the palate, ginger and oxidised apple lead, with mild acidity and a subtle bite that adds grip and character — a style well suited to richer, layered dishes.
Production

Produced through a controlled double fermentation: yeast first creates a small amount of alcohol, which is then converted into natural acidity by bacteria, ensuring a final alcohol level of 0.0%. The base is built on organic tea, sugar, and Hidcote Blue lavender, with fermentation guided to preserve balance and highlight the drink’s Nordic-inspired aromatics.

This variant is infused with Hidcote Blue, the dominant lavender flower growing in the Nordics. It's our bestselling product and winner of one of the most recognised Danish product prize "Sol over Gudhjem".

Pairing

With its unique fermentation notes, this variant pairs effortlessly with umami-rich dishes and smoky flavours with ingredients like tomatoes, eggplant, pork, and poultry and connects especially well with miso glaze. Also work well as apéritif.
