Pinot Noir (100%) · 2023 · 12.5% abv

A poised, luminous Irancy that opens with wild cherries, redcurrant, and violets, layered with earthy spice and a graphite edge. The palate is fine-grained and energetic, red fruit pulsing through supple tannins and a saline finish that hums with quiet persistence. With air, it unfurls notes of forest floor and dried herbs, hinting at graceful evolution ahead.
Production

Grapes are hand-harvested, rigorously sorted, and gently destemmed. A brief cold maceration enhances colour and perfume before spontaneous fermentation in stainless steel. Gentle pump-overs favour finesse over force. The wine completes malolactic conversion, then ages around 12 months in French oak — a restrained touch of new wood adding spice and fine structure without dimming the fruit.

Vinyard

Irancy sits just southwest of Chablis in the Yonne, where Pinot Noir ripens slowly on steep, south-facing slopes of Kimmeridgian limestone and marl. These ancient marine soils lend structure and mineral tension, while the valley’s cool nights and gentle northern breezes preserve purity, acidity, and that tell-tale saline snap unique to this corner of Burgundy.

Pairing

Serve with duck breast and sour cherry jus, roasted quail with wild mushrooms, or earthy lentils with pancetta and thyme. Its bright fruit and subtle savouriness make it a natural partner for dishes where sweetness, salt, and umami intertwine.
