Jirón de Niebla from the Vino de Paraje of El Sotillo is a vertical, direct expression of Garnacha from old, north-facing vines. The cool exposure gives the wine a marked acidity and vibrant freshness. Aromas of fresh red fruit, white flowers, and subtle spice lead into a palate that is precise and elongated, with a very pronounced mineral backbone. Aged in a mix of barrels and concrete eggs, it combines purity and complexity. Bottled unfiltered and unclarified, it may present natural sediment.
Production
From old Garnacha bush vines grown traditionally with animal tillage and manual vegetation work. Each year, the vineyard is managed with winter respect pruning, spring green pruning, vegetation control, and cluster thinning. Grapes are hand-harvested in September–October into 12 kg crates, yielding 0.5–1 kg per plant. After a 3–7 day cold pre-fermentation, the must ferments with indigenous yeasts at 20–24 ºC, with a 15–30 day maceration and spontaneous malolactic fermentation. Ageing lasts 10 months in 1,200–1,400 L concrete eggs and seasoned 500 L French oak barrels.

Jirón de Niebla – El Sotillo comes from old, north-facing Garnacha vines rooted in the rugged granite slopes of the Sierra de Gredos. The cool exposure preserves marked acidity and freshness, while the age of the vines ensures low yields and concentrated fruit. Traditional viticulture is followed, with all vineyard work carried out manually and with animal assistance. This unique site gives the wine its floral lift, red-fruited precision, and pronounced mineral backbone, a pure expression of terroir.
