Aromatic and textured, showing ripe white peach, apricot skin, almond and a savoury umami edge. Clean, precise and mouthcoating, with a long, nutty finish.
Production
Whole bunches fermented and aged nine months in clay amphorae. Native yeasts, minimal sulphur, no oak influence — purity of fruit and shape over weight. Gentle settling rather than filtration.
Vinyard
Sourced from biodynamic plots in Elvillar, Rioja Alavesa, where limestone soils and cool nights preserve perfume and acidity. High-altitude vineyards give tension to Garnacha Blanca’s natural breadth.
Pairing
A superb match for porchetta with cannellini beans, or aged Manchego with quince paste.
