Production

Soft pressing; cool ferment in stainless steel. Bottled with ~24 g/L sugar to complete in bottle; 12 months sur lie before release. Hand-disgorged, topped with the same wine; minimal SO₂, no fining or filtration.

Vinyard

Old-vine Garnacha Blanca from San Martín de Unx at ~500 m. Calcareous clay and diurnal swings carve freshness; sparse soils push aromatic concentration. Hand work, no herbicides or insecticides.

Pairing

Grilled prawns with allioli, saffron seafood pasta, or braised chicory with blue cheese and toasted walnuts — the wine’s creamy core loves salt and bitterness.
