Wild strawberry, cracked pepper and sweet spice aromas lead into a refined palate of black cherry and plum. Silky tannins and bright acidity make this a nuanced, medium-bodied red.
Production

Destemmed with 25 % whole bunches, cold-soaked 3–4 days. Spontaneous fermentation below 25 °C with co-inoculated malolactic. Aged 10 months in French oak then 10 months in tank for integration.

Vineyard

From the Dessi vineyard at 220 m, where silty-clay soils and cool nights shape an expressive, terroir-driven Koiniariko. Dry farming and old vines (20–30 yrs) add natural concentration.

Pairing

Excellent with lamb kofte and yoghurt sauce, roasted duck with cherry glaze, or grilled aubergine and bulgur salad.
