La Entrada P7 2020
DO Almansa, Spain
Sauvignon Blanc (100%) · 2020 · 13% abv
La Entrada P7 opens with ripe citrus, white peach and toasted almond, edged by vanilla and sweet spice from perfectly judged oak. The palate is textured yet poised — creamy from barrel ageing but lifted by bright acidity — unfolding flavours of baked apple, lemon curd and a whisper of smoke. A saline edge and fine oak tannin extend the finish with depth, precision and drive. Stylistically, it sits closer to top Loire Sauvignon.
Production
Grapes are destemmed and macerated on skins for 48 hours, before fermentation. The wine matures 12 months in French oak, developing depth and texture while retaining varietal brightness.
Vineyard
Hand-tended organic vines rooted in Almansa’s limestone-rich soils. High elevation sites ensure crisp acidity and vibrant aromatics, while the dry continental climate guarantees concentration without heaviness.
Pairing
A sharp match for mussels with mignonette or seafood pasta. Try with grilled white fish, or venture into Japanese pairings — California rolls with spicy mayo highlight its savoury side.
