Production
A gentle 48 h cold soak precedes cool fermentation (16–18 °C) to retain aromatic precision. Aged 6 months in stainless steel before a light spring bottling.
Vinyard
South-east-facing vineyards on calcareous soils with deep mineral veins lend both aromatic intensity and structure. Biological vineyard management maintains soil vitality and purity.
Pairing
Excellent with cured meats, creamy pasta, grilled fish, or roasted chicken. A brilliant partner to Parmigiano Reggiano and delicate shellfish.
