Bright and focused, this Chardonnay balances crisp orchard fruit with gentle richness. Notes of green apple, mirabelle plum and citrus zest are layered with subtle brioche and toasted hazelnut from oak ageing. Fresh acidity and a clean, mineral finish give the wine poise and precision.
Production
Predominantly hand-harvested fruit is fermented at cool temperatures to retain freshness. Around 20% of the wine is matured in old oak barrels, adding texture and subtle complexity without overwhelming the fruit. Gentle handling throughout preserves precision and balance.
Vineyard
Grapes are sourced from the cool, high-altitude slopes of the Pyrenees in the Haute Vallée de l’Aude, where warm days and cool nights ensure a long growing season and vibrant acidity. Clay-limestone soils contribute structure and finesse, while the altitude preserves freshness and aromatic clarity.
Pairing
A classic partner for creamy tarragon chicken, wild mushroom risotto or buttery shellfish. It also pairs beautifully with seafood pasta and grilled white fish, where the wine’s freshness and gentle oak influence complement delicate flavours.
