Production
Predominantly hand-picked fruit is vinified in large, old oak vats, a traditional approach that preserves varietal character while adding subtle texture. Gentle handling and measured extraction keep tannins fine and elegant, while careful maturation enhances complexity without overpowering the fruit.
Vineyard
The grapes are sourced from high-altitude vineyards on the cool slopes of the Pyrenees in the Haute Vallée de l’Aude. Clay and limestone soils and significant day–night temperature swings allow for slow ripening and nuanced flavour development, giving the wine freshness, balance and complexity.
Pairing
A versatile partner to many dishes — try with rosemary-marinated lamb chops, duck breast or mushroom risotto. It’s equally delicious alongside saucisson or simply enjoyed on its own, slightly chilled, as a refined, easy-drinking red.
