Tintilia (100%) · 2023 · 14% abv

Mid-crimson and glimmering. Dense black cherry, damson, and clove unfold into cocoa and bay leaf. Compact yet graceful, the palate carries ripe fruit framed by fine chalk-edged tannins and a savoury finish that whispers of coastal herbs and smoke.
Production

Partially fermented with stems for tactile grip. Ten-day maceration with gentle hand pigeage, spontaneous fermentation in open vats, then 14 months in second- and third-use French oak. Bottled unfiltered to retain its natural texture and depth.

Vinyard

From Viña de Las Ánimas in Pago Balbaína, a west-facing slope of closed Tosca Albariza — fossil-rich limestone marl born of ancient seas. At the Atlantic’s doorstep, warm days and ocean winds ripen Tintilla’s tiny berries while preserving their piercing acidity.

Pairing

Try with slow-braised oxtail, Iberian pork cheeks, or black lentils with morcilla. Its dark fruit and supple tannins thrive alongside rich, gelatinous textures.
