Chardonnay (100%) · 2024 · 13% abv
Pale gold with green glints. Aromas of white peach, citrus zest, and toasted almond glide into a saline, creamy palate. Sun-kissed fruit meets Atlantic restraint; texture without heaviness, ending on a chalk-bright finish.
Production
Fermented in 600-L French oak bocoyes, then aged eight months on fine lees with no bâtonnage — allowing the site’s natural richness to shine unadorned. Minimal intervention, maximum clarity.
Vinyard
North-facing Chardonnay from Pago Carrascal’s Tosca Albariza — porous, blindingly white marl that reflects light and cools roots. Early harvest mid-July safeguards acidity before Cádiz’s fierce heat sets in.
Pairing
Ideal with white prawns, clams a la marinera, meagre in almond sauce, or Urta a la Roteña. Its savoury creaminess mirrors seafood sweetness and Andalusian sauces.
