Listán Blanco (50%), Albillo (50%) · 2022 · 13% abv
Complex and finely balanced, this white blend shows aromas of fennel, citrus peel, pear and quince, evolving with notes of herbs and subtle nuttiness. The palate is taut and structured, with Listán Blanco’s lively acidity providing backbone while Albillo Criollo lends weight, texture and a long, gently glyceric finish.
Production
Both varieties are co-fermented spontaneously over three weeks with ambient yeasts. After fermentation, the wine rests on its lees for at least 12 months with minimal racking to build texture and complexity. Around 25% ages in used French oak, while the remainder stays in stainless steel, combining richness with tension.
Vinyard
Grapes come from the Los Topes plot on the cooler, western side of the Orotava Valley at 650 m. Frequent cloud cover, reduced sunlight hours and extended ripening preserve acidity and aromatic definition. Volcanic soils with sand, basalt and clay add mineral depth, while old vines and dry farming ensure low yields and concentrated fruit.
Pairing
A versatile gastronomic white that shines with sushi, sashimi and ceviche. It’s equally suited to spiced Asian dishes, grilled white fish or roasted chicken with lemon and herbs. As it evolves, its savoury complexity pairs beautifully with aged cheeses or creamy shellfish pastas.
