A pure expression of volcanic terroir, this Listán Negro opens with a whiff of gunpowder and smoky minerality before unfurling into red berry fruit, cracked pepper and wild herbs. Medium-bodied and vibrant, it’s defined by soft, fruit-driven tannins, savoury complexity and a long, finely spiced finish that evolves beautifully with air.
Production
Grapes are partially crushed and foot-trodden, with a proportion of stems retained depending on the vintage. Fermentation occurs naturally in open concrete *lagars* with ambient yeasts and no temperature control. An 8–12 day maceration builds gentle structure. The wine matures for 7 months in used 600 L French oak barrels and 12 months in concrete before bottling unfined and unfiltered.
Vinyard
Sourced from 150-year-old vines in La Quinta at 400 m, just 4 km from the Atlantic and 14 km from Mount Teide. The dramatic setting — steep slopes, volcanic soils and strong oceanic influence — produces low yields and deeply expressive fruit. Most vines are trained in the historic *cordón trenzado* system, extending vine life and enhancing balance.
Pairing
Its savoury edge and volcanic character make it a superb match for grilled lamb chops, mojo-marinated pork or earthy mushroom dishes. It’s also brilliant with aged sheep’s cheese or simple chargrilled vegetables — anything that embraces smoke, spice and umami.
